><h4><strong>Ingr\u00e9dients :<\/strong><\/h4>\n<ul>\n<li>1 selle d&rsquo;agneau d\u2019environ 1,5 Kg (demander \u00e0 votre boucher de la d\u00e9sosser \u00e0 plat et de vous donner les os)<\/li>\n<li>500 gr de pousses d&rsquo;\u00e9pinards<\/li>\n<li>6 tomates<\/li>\n<li>3 gousses d\u2019ail<\/li>\n<li>1 carotte<\/li>\n<li>1 oignon<\/li>\n<li>3 branches de thym<\/li>\n<\/ul>\n<h4><strong>Recette\u00a0 :<\/strong><\/h4>\n<p data-start=\"245\" data-end=\"280\"><strong>Pr\u00e9paration du jus d\u2019agneau\u00a0 :\u00a0<\/strong><br data-start=\"320\" data-end=\"323\" \/>Dans une casserole bien chaude, faire dorer les os d\u2019agneau jusqu\u2019\u00e0 obtenir une belle coloration brune et caram\u00e9lis\u00e9e. Ajouter une gousse d\u2019ail, l\u2019oignon et la carotte coup\u00e9s en petits d\u00e9s. Laisser l\u00e9g\u00e8rement pincer les sucs au fond de la casserole, puis d\u00e9glacer avec de l\u2019eau \u00e0 hauteur. Porter \u00e0 \u00e9bullition et laisser r\u00e9duire doucement jusqu\u2019\u00e0 obtenir un jus concentr\u00e9 et l\u00e9g\u00e8rement \u00e9pais. Filtrer le jus \u00e0 l\u2019aide d\u2019un chinois et r\u00e9server.<\/p>\n<p data-start=\"781\" data-end=\"815\"><strong>Pr\u00e9paration des garnitures :\u00a0 <\/strong>Porter \u00e0 \u00e9bullition une casserole d\u2019eau sal\u00e9e. Retirer le p\u00e9doncule des tomates et inciser une croix \u00e0 leur base avec la pointe d\u2019un couteau. Les plonger environ 5 secondes dans l\u2019eau bouillante, puis imm\u00e9diatement dans de l\u2019eau glac\u00e9e afin de stopper la cuisson et faciliter l\u2019\u00e9pluchage. Retirer la peau, couper les tomates en quatre et enlever la chair int\u00e9rieure. Disposer les quartiers sur une plaque, assaisonner, arroser d\u2019un filet d\u2019huile d\u2019olive puis enfourner \u00e0 110 \u00b0C pendant environ 30 minutes afin de les confire l\u00e9g\u00e8rement. R\u00e9server.<\/p>\n<p data-start=\"781\" data-end=\"815\">Dans une casserole, faire tomber les pousses d\u2019\u00e9pinards avec une gousse d\u2019ail et un filet d\u2019huile d\u2019olive. \u00c9goutter soigneusement pour retirer l\u2019exc\u00e9dent d\u2019eau.<\/p>\n<p><strong>Montage et cuisson de la selle d\u2019agneau : <\/strong>D\u00e9poser les \u00e9pinards et les tomates confites au centre de la selle d\u2019agneau. Rouler la viande sur elle-m\u00eame puis la ficeler comme un r\u00f4ti afin de bien maintenir la farce. Dans une po\u00eale avec un filet d\u2019huile d\u2019olive, saisir le r\u00f4ti sur toutes les faces jusqu\u2019\u00e0 obtenir une belle coloration. Terminer la cuisson au four pendant 15 minutes \u00e0 180 \u00b0C.<\/p>\n<p data-start=\"1938\" data-end=\"2061\">Retirer la ficelle, d\u00e9couper en tranches et servir accompagn\u00e9 du jus
